The Hungry Deal The season’s celebrants are in for a gastronomic cruise at Porta with its 4-course Sea Jewels. These signatures can be paired with 3 selected labels of Cattier Champagne produced by a family-owned champagne house since 1625 in Chigny Les Roses, Champagne, France.

Begin your festive evening with a plump Hokkaido Scallop in flavoursome Vichyssoise, enhanced with a savoury Avruga caviar and crunchy Parmesan crouton. Pair it with Brut Icône, a refreshing fruity bubbly with aromas of apricots, peach and ripe pear on the nose.

Proceed to the luxurious Maine lobster done 2 styles. Diners can expect a succulent half lobster that is lightly poached accompanied by a generous spread of creamy cheese sauce while its claw is butter-basted with a nutty hint. Pair this with an elegant smooth fruity Dry Rosé with notes of red fruit cocktails on the nose.

For mains, choose between tender, flaky Black Cod in tangy tomato base, served with beans flavoured in smoky chorizo, or a non-seafood signature that brims with intense umami flavour profile – braised Beef Tenderloin in Red Wine Sauce and king oyster mushroom. We recommend Brut Premier Cru, a bold bubbly in its own class, where all its grapes hail from premier cru villages. The nose is pleasant with dried floral aromas, plum and biscuit notes, whilst the mouth is smooth with hints of dried fruits, orange and cinnamon.

Round off your festive evening with Porta’s version of a deconstructed Christmas cake. The Dry Rose with notes of super fresh cold berries and a citrus finish is a perfect accompaniment to the dessert’s triple flavours of chocolate, vanilla and cream cheese.
